Opti’s Kitchen

Meet Opti — an Optimus who somehow ended up in the middle of the weirdest friend group in the universe. He’s a bit literal, slightly naive, and takes his cooking very seriously. Everything that comes out of his kitchen is low-carb by design (because that’s just how his circuits work).

Whether he’s experimenting with new waffle recipes, perfecting fat bombs, or trying to understand why humans put sugar in everything, Opti approaches cooking with the same earnest enthusiasm he brings to most things. The results are usually delicious… and occasionally educational.

Rosa’s Strawberry Fat Bombs

Ingredients

1 Cup freeze dried strawberries

1 Cup unsweetened, shredded coconut

1 Cup macadamia nuts

1 Cup almond flour

1 teaspoon vanilla extract

1 teaspoon strawberry extract

8 oz Cream cheese

1 teaspoon monkfruit extract powder

Heavy cream, add by Tablespoon to loosen texture if needed

Instructions: Blitz the strawberries, coconut and macadamia nuts into crumbs by pulsing in your food processor. Set aside half of this to roll the balls in later. To the remaining crumbs, add the 1 Cup of almond flour and 1 teaspoon monkfruit extract powder. Pulse 2 or 3 times. Add the room temperature 8 ounce cream cheese, vanilla and strawberry extract and pulse until fully combined. You want the dough stiff and a bit sticky…if it seems too stiff add 1-2 Tablespoons of heavy cream until it is firm but sticky. Spread the strawberry/coconut/macadamia nut crumbs on a plate. Roll the dough into 1 Tablespoon sized balls then roll them in the crumbs until completely coated. Makes about 20 balls. Store in refrigerator. You can freeze them too and they are like strawberry/coconut/macadamia nut ice cream bombs!
